Crunchy and deliciously savory, this chicken turns out moist every time. Goes well with a salad, potatoes, or a green vegetable.
Preheat oven to 450 degrees and lightly grease a glass baking dish (10 in x 15 in works well)
In a shallow bowl, whisk together butter, dijon, and garlic. In a second bowl, combine bread crumbs, parmesan, dried parsley, and salt and pepper if desired
Dip chicken breast pieces in butter first, and then roll in breadcrumbs to fully coat each piece
Place chicken in oiled baking pan and into preheated oven and cook for 15 minutes until chicken is cooked through and breadcrumbs are golden brown
Serve with your favorite dipping sauce or hot sauce. Delicious with additional mustard or even blue cheese dressing
