Walnut Pesto

Mahhkk's Walnut Pesto
An easy, quick pesto made with walnuts instead of pine nuts. Serve over pasta, zucchini noodles, or with bread.

Ingredients

  • 2.5 cups basil lightly packed
  • 1/4 cup walnuts toasted quickly in pan or toaster oven
  • 1/4 tsp salt (or more to taste)
  • 3 cloves garlic
  • 1/2 cup Parmesan cheese
  • 2 Tbsp butter
  • 1/3 cup olive oil

Instructions

  • Add basil, walnuts, salt, and garlic to food processor and blend
  • Add Parmesan and continue to blend
  • Add butter and olive oil, and blend until well combined

Notes

Initially I made this with 1/2 cup walnuts instead of 1/4 cup. It was a little too nutty. And when you're toasting the nuts, make sure not to burn them - it's easy to do!
