Slow Cooker Buffalo Chicken Dip

No Bullshit Kitchen Buffalo Chicken Dip
Hot sauce. Chicken. Blue cheese. This is the BEST buffalo chicken dip and doesn’t rely on a gross packet of dried ranch seasoning. It’s hard not to eat the entire bowl.

Ingredients

  • 2 Tbsp butter
  • 1/2 medium onion minced finely
  • 1 lb shredded chicken (see note)
  • 1 cup Frank’s RedHot hot sauce
  • 1/4 cup sour cream
  • 1/4 cup blue cheese dressing
  • Juice of half a lemon
  • 1/2 cup blue cheese
  • 6 oz cream cheese
  • 1/4 cup scallions

Instructions

  • In a large skillet, melt the butter and add the onions
  • Cook until onions are just starting to turn translucent, then add chicken and hot sauce
  • Stir and cook for about 3 minutes, until sauce starts to thicken a bit
  • Add chicken mixture to slow cooker, along with all other ingredients except for scallions
  • Mix well and set slow cooker to low for 2-3 hours. Stir once about halfway through cooking to make sure the cheeses are well combined with everything else
  • To serve, top with scallions and, if desired, additional blue cheese and hot sauce. Perfect with chips, celery, carrots, or whatever else you’d like to dip!

Notes

A rotisserie chicken works great for this – one regular-sized rotisserie chicken will give you just about a pound of meat.
 
Do NOT use Frank’s Buffalo Wing sauce. Just the regular Frank’s RedHot hot sauce. In fact, you should never buy those bottled “buffalo wing sauces” because they all use an imitation butter “flavor” that is not nearly as good as the real thing.
