Simple Lemon Garlic Spinach

A great, quick side dish that also happens to be a fantastic way to use up some spinach that is past its prime.

Ingredients

  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1/2 medium onion sliced
  • 3 cloves garlic minced
  • 5 oz baby spinach (about 5 loose cups)
  • salt to taste
  • 1 slice lemon
  • parmesan cheese (optional)

Instructions

  • Add butter and olive oil to a medium-sized pot.
  • When oil is heated and butter has melted, add the onions and a sprinkle of salt. Sauté until just starting to turn translucent, then add garlic.
  • When the onions look like they're just starting to brown, add the baby spinach. 
  • Cook for about 5 minutes, or until wilted, stirring occasionally.
  • Take off heat and squeeze lemon onto spinach. Give it a quick stir and then serve! Top with parmesan cheese if desired.

Notes

You'll really want to use fresh lemon for this recipe. The bottled lemon juice never tastes quite the same and because there are so few ingredients here, you'll be able to tell it isn't fresh. 
You could also sprinkle on a bit of red pepper flakes if you'd like to kick up the heat a little bit.
