Ingredients
- 1 Tbsp olive oil
- 3/4 lb Italian sausage casings removed
- 1 medium onion thinly sliced
- 1 clove garlic minced
- red wine (about a half cup or so)
- 1 lb kale
- 1 can cannellini beans rinsed and drained
- smoked paprika (optional)
- salt
- lemon wedges for serving
- parmesan cheese for serving
Instructions
- Heat olive oil in a medium pot.
- Add sausage, crumbling while it starts to brown.
- When sausage is fully browned, add onion and garlic.
- Splash in some of the red wine, and sprinkle a little salt and smoked paprika if desired.
- Cook until onions start to brown a bit at the edges. Splash some additional red wine as they finish cooking if you'd like.
- Add the kale and mix well. Add a final splash of red wine.
- When the kale just starts to wilt, after about 3-5 minutes, add the beans.
- Stir together and cook for another 5 minutes or so. Taste and add additional salt, smoked paprika, or pepper as desired.
- For serving, add parmesan cheese and a squeeze of lemon.
