Sausage with Kale & Beans

 

Mahhkk's sausage kale and beans
This is a fantastic one-pot dinner. Get some high quality Italian sausage since it really shines through here. But you can use the cheap red wine!

Ingredients

  • 1 Tbsp olive oil
  • 3/4 lb Italian sausage casings removed
  • 1 medium onion thinly sliced
  • 1 clove garlic minced
  • red wine (about a half cup or so)
  • 1 lb kale
  • 1 can cannellini beans rinsed and drained
  • smoked paprika (optional)
  • salt
  • lemon wedges for serving
  • parmesan cheese for serving

Instructions

  • Heat olive oil in a medium pot.
  • Add sausage, crumbling while it starts to brown.
  • When sausage is fully browned, add onion and garlic.
  • Splash in some of the red wine, and sprinkle a little salt and smoked paprika if desired.
  • Cook until onions start to brown a bit at the edges. Splash some additional red wine as they finish cooking if you'd like.
  • Add the kale and mix well. Add a final splash of red wine.
  • When the kale just starts to wilt, after about 3-5 minutes, add the beans.
  • Stir together and cook for another 5 minutes or so. Taste and add additional salt, smoked paprika, or pepper as desired.
  • For serving, add parmesan cheese and a squeeze of lemon.
