Ingredients
- 1.5 lbs mild Italian sausage (about 6 links)
- 1 medium onion minced
- 3 cloves garlic minced
- 1/2 tsp garlic powder
- 1 cup long-grain white rice
- 2.5 cups beef or chicken broth
- 1 cup cheddar cheese grated
- 1 cup shredded mozzarella cheese
- 1/4 cup parmesan cheese grated
- 2 medium zucchini shredded in food processor or with box grater
- 2 cups baby spinach optional
Instructions
- Remove sausage from casings.
- In a large skillet, cook sausage until it is just starting to brown. If you’re using a lower-fat sausage, you might want to add a tablespoon of butter
- Add onion, garlic, and garlic powder and cook until onion begins to turn translucent
- Add rice to skillet and stir to combine. Cook for about two minutes until rice starts to get a bit toasted
- Add broth to skillet and set the burner to medium-low. When the liquid starts to simmer, cover and let cook for about 15 minutes
- Once the rice absorbs all the liquid, remove the cover and stir in the cheeses, spinach, and zucchini
- Cook for another minute or two until the cheese is completely melted. Serve in bowls and enjoy!
