Zucchini and Sausage Skillet with Rice
A kid-friendly, cheesy one-skillet meal with savory sausage, zucchini and spinach, and rice. Comes together in 30 minutes or less!

Ingredients

  • 1.5 lbs mild Italian sausage (about 6 links)
  • 1 medium onion minced
  • 3 cloves garlic minced
  • 1/2 tsp garlic powder
  • 1 cup long-grain white rice
  • 2.5 cups beef or chicken broth
  • 1 cup cheddar cheese grated
  • 1 cup shredded mozzarella cheese
  • 1/4 cup parmesan cheese grated
  • 2 medium zucchini shredded in food processor or with box grater
  • 2 cups baby spinach optional

Instructions

  • Remove sausage from casings.
  • In a large skillet, cook sausage until it is just starting to brown. If you’re using a lower-fat sausage, you might want to add a tablespoon of butter
  • Add onion, garlic, and garlic powder and cook until onion begins to turn translucent
  • Add rice to skillet and stir to combine. Cook for about two minutes until rice starts to get a bit toasted
  • Add broth to skillet and set the burner to medium-low. When the liquid starts to simmer, cover and let cook for about 15 minutes
  • Once the rice absorbs all the liquid, remove the cover and stir in the cheeses, spinach, and zucchini
  • Cook for another minute or two until the cheese is completely melted. Serve in bowls and enjoy!
