Remove sausage from casings.
In a large skillet, cook sausage until it is just starting to brown. If you’re using a lower-fat sausage, you might want to add a tablespoon of butter
Add onion, garlic, and garlic powder and cook until onion begins to turn translucent
Add rice to skillet and stir to combine. Cook for about two minutes until rice starts to get a bit toasted
Add broth to skillet and set the burner to medium-low. When the liquid starts to simmer, cover and let cook for about 15 minutes
Once the rice absorbs all the liquid, remove the cover and stir in the cheeses, spinach, and zucchini
Cook for another minute or two until the cheese is completely melted. Serve in bowls and enjoy!
