Sardine Sandwich
An easy, filling sandwich that’s perfect for lunch. Pair with a soup, salad, or potato chips.

Servings 1 sandwich
Ingredients
- 2 slices bread crusty whole wheat works best
- 2 Tbsp plain greek yogurt
- 2 Tbsp dijon or whole grain mustard or more to taste
- 1 can sardines packed in water drained
- 2 leaves lettuce
- onion very thinly sliced
- 1 baby cucumber thinly sliced
- 1 hard boiled egg sliced
Instructions

Toast bread if desired

Mix together yogurt and mustard and spread on both pieces of bread

Gently flake or slice the sardines and arrange on one of the slices of bread

Top with lettuce, cucumbers, hard boiled eggs, and onion

Finish assembling your sandwich with the last piece of bread, and slice in half
