Ingredients
- 2 slices bread crusty whole wheat works best
- 2 Tbsp plain greek yogurt
- 2 Tbsp dijon or whole grain mustard or more to taste
- 1 can sardines packed in water drained
- 2 leaves lettuce
- onion very thinly sliced
- 1 baby cucumber thinly sliced
- 1 hard boiled egg sliced
Instructions
- Toast bread if desired
- Mix together yogurt and mustard and spread on both pieces of bread
- Gently flake or slice the sardines and arrange on one of the slices of bread
- Top with lettuce, cucumbers, hard boiled eggs, and onion
- Finish assembling your sandwich with the last piece of bread, and slice in half
