Sardine Sandwich

An easy, filling sandwich that’s perfect for lunch. Pair with a soup, salad, or potato chips.

Ingredients

  • 2 slices bread crusty whole wheat works best
  • 2 Tbsp plain greek yogurt
  • 2 Tbsp dijon or whole grain mustard or more to taste
  • 1 can sardines packed in water drained
  • 2 leaves lettuce
  • onion very thinly sliced
  • 1 baby cucumber thinly sliced
  • 1 hard boiled egg sliced

Instructions

  • Toast bread if desired
  • Mix together yogurt and mustard and spread on both pieces of bread
  • Gently flake or slice the sardines and arrange on one of the slices of bread
  • Top with lettuce, cucumbers, hard boiled eggs, and onion
  • Finish assembling your sandwich with the last piece of bread, and slice in half
