Ingredients
- 2 lbs carrots peeled and sliced into 3-inch pieces
- 3 Tbsp olive oil
- 4 cloves garlic crushed
- 1 tsp garlic powder
- 1/4 cup parmesan cheese shredded
- 3 Tbsp breadcrumbs
- sea salt
- freshly ground pepper
Instructions
- Preheat oven to 400 degrees and grease a baking sheet with olive oil (or use nonstick)
- Arrange carrots on sheet in a single layer and add the crushed garlic cloves.
- Add the olive oil, garlic powder, parmesan, bread crumbs, salt and pepper to pan, and toss to coat the carrots
- Spread back out into a single layer and bake for about 20 minutes, or until tender and starting to crisp around the edges
