Roasted Garlic Parmesan Carrots

These flavorful, soft and slightly crispy carrots are savory and pair well with tons of main entrees. A really nice side dish for the cold weather.

  • 2 lbs carrots peeled and sliced into 3-inch pieces
  • 3 Tbsp olive oil
  • 4 cloves garlic crushed
  • 1 tsp garlic powder
  • 1/4 cup parmesan cheese shredded
  • 3 Tbsp breadcrumbs
  • sea salt
  • freshly ground pepper


  1. Preheat oven to 400 degrees and grease a baking sheet with olive oil (or use nonstick)

  2. Arrange carrots on sheet in a single layer and add the crushed garlic cloves. 

  3. Add the olive oil, garlic powder, parmesan, bread crumbs, salt and pepper to pan, and toss to coat the carrots

  4. Spread back out into a single layer and bake for about 20 minutes, or until tender and starting to crisp around the edges
