Roasted Garlic Parmesan Carrots

No Bullshit Kitchen Roasted Carrots
These flavorful, soft and slightly crispy carrots are savory and pair well with tons of main entrees. A really nice side dish for the cold weather.

Ingredients

  • 2 lbs carrots peeled and sliced into 3-inch pieces
  • 3 Tbsp olive oil
  • 4 cloves garlic crushed
  • 1 tsp garlic powder
  • 1/4 cup parmesan cheese shredded
  • 3 Tbsp breadcrumbs
  • sea salt
  • freshly ground pepper

Instructions

  • Preheat oven to 400 degrees and grease a baking sheet with olive oil (or use nonstick)
  • Arrange carrots on sheet in a single layer and add the crushed garlic cloves. 
  • Add the olive oil, garlic powder, parmesan, bread crumbs, salt and pepper to pan, and toss to coat the carrots
  • Spread back out into a single layer and bake for about 20 minutes, or until tender and starting to crisp around the edges
