Roasted Asparagus

Ingredients

  • 1 lb asparagus rinsed and dried
  • 2 Tbsp olive oil
  • salt
  • pepper

For Serving

  • balsamic vinegar
  • squeeze of lemon
  • Parmesan cheese

Instructions

  • Pre-heat oven to 400 degrees.
  • If you'd like, you can trim the thick ends of the asparagus. Even when roasted, they can be a bit tough.
  • On a baking sheet, toss asparagus with olive oil, salt, and pepper. Spread into a single layer.
  • Bake for about 15 minutes, or until the asparagus just begins to brown.
  • To serve, top with a splash of balsamic vinegar, a squeeze of lemon juice, or Parmesan cheese.
