Ingredients
- 3 tablespoons bacon grease
- 4 cloves garlic finely chopped
- 2 medium onions finely chopped
- 1 red bell pepper chopped
- 1 yellow bell pepper chopped
- 3 tablespoons chili powder
- 1 tablespoon ground cumin
- 2 teaspoons dried oregano
- 1 tablespoon paprika
- 1 tablespoon smoked paprika
- salt
- black pepper
- cinnamon
- 1 pound 85 percent lean ground beef
- 1 cup beer recommended: Corona
- 1 15 oz can black beans drained and rinsed
- 1 15 oz can kidney beans drained and rinsed
- 1 pound pulled pork cooked
- 1 cup semi-sweet chocolate chips
- 1 24 oz can whole plum tomatoes with juice
- 1 15 oz can diced tomatoes with juice
For Serving
- Lime wedges
- Sour cream
- Hot sauce
Instructions
- In large heavy-bottomed Dutch oven, heat bacon fat until melted.
- Add the garlic, onions, bell peppers, chili powder, cumin, paprika, smoked paprika, and oregano and season with salt, pepper, and a sprinkle of cinnamon to taste.
- Cook until the vegetables are just starting to brown. Add the beef and break it up with a wooden spoon.
- Once beef is beginning to brown, stir in the beer and beans. Toss together, then add the whole plum tomatoes, crushing them with your hands or your spoon as you add them. Then add the diced tomatoes with juice.
- Add the cooked pulled pork and chocolate, and stir to combine.
- Turn the heat down to low and simmer for 45-60 minutes.
- Taste for seasoning and add salt, pepper, smoked paprika, additional chili powder, etc. if necessary.
- Transfer the chili to serving bowls and add lime juice, sour cream, and hot sauce as needed.
Notes
You can also top this chili with guacamole, chips, shredded cheddar cheese, scallions, or whatever your heart desires.
