Panko Mustard Chicken
Crunchy and deliciously savory, this chicken turns out moist every time. Goes well with a salad, potatoes, or a green vegetable.

Ingredients

  • 2 lbs chicken breast cut in half, about 6 oz each piece
  • 2 cloves garlic minced
  • 1/3 cup butter
  • 1/3 cup Dijon mustard
  • 1/2 cup panko bread crumbs
  • 1/4 cup Parmesan shredded
  • 1 tsp dried parsley

Instructions

  • Preheat oven to 450 degrees and lightly grease a glass baking dish (10 in x 15 in works well)
  • In a shallow bowl, whisk together butter, dijon, and garlic. In a second bowl, combine bread crumbs, parmesan, dried parsley, and salt and pepper if desired
  • Dip chicken breast pieces in butter first, and then roll in breadcrumbs to fully coat each piece
  • Place chicken in oiled baking pan and into preheated oven and cook for 15 minutes until chicken is cooked through and breadcrumbs are golden brown
  • Serve with your favorite dipping sauce or hot sauce. Delicious with additional mustard or even blue cheese dressing
