Kale & Goat Cheese Scrambled Eggs

Ingredients

  • 1 Tbsp butter
  • 1 handful kale chopped
  • garlic powder
  • 2 eggs
  • 1 spoonful Greek yogurt
  • 1 oz goat cheese
  • kosher salt for serving

Instructions

  • Heat butter in medium pan and sautee kale until soft. Sprinkle with garlic powder and a little salt
  • Whisk together eggs and yogurt in a bowl, and then add to pan
  • Cook until the eggs are just set - they'll keep cooking a little bit after you remove from heat
  • Serve on a plate and top with goat cheese, pepper, and kosher or other flaky salt
