Ingredients
- 1 Tbsp butter
- 1 handful kale chopped
- garlic powder
- 2 eggs
- 1 spoonful Greek yogurt
- 1 oz goat cheese
- kosher salt for serving
Instructions
- Heat butter in medium pan and sautee kale until soft. Sprinkle with garlic powder and a little salt
- Whisk together eggs and yogurt in a bowl, and then add to pan
- Cook until the eggs are just set - they'll keep cooking a little bit after you remove from heat
- Serve on a plate and top with goat cheese, pepper, and kosher or other flaky salt
