  • Garlic Scape Pesto
    Curly whirly garlic scapes can look a bit odd when you find them in your farmshare or at your local market. But they make absolutely delicious pesto!

    Servings: 1 cup

    Ingredients

    • 10 garlic scapes roughly chopped
    • 1 cup lightly packed basil leaves
    • 1/3 cup pecans
    • 1/2 cup shredded parmesan cheese
    • 1.5 Tbsp lemon juice
    • 1/4 tsp kosher salt
    • 1/8 tsp freshly ground pepper
    • 1/3 cup olive oil

    Instructions

    • Add garlic scapes to your food processor and give a few pulses to break them down a bit.
    • Add all other ingredients except olive oil and pulse a few more times.
    • Turn on food processor and slowly add the olive oil. You may need to stop once or twice and scrape down the sides of the bowl.
    • Taste your pesto - you may want to add more lemon juice, cheese, or olive oil.
    • Enjoy with pasta, fish, zucchini, ground meat, or anything else you desire!
