Cumin & Lime Chickpea Salad

This is such a bright, flavorful chickpea salad that's not only quick to put together, but super cost effective.

  • 2 cans chickpeas drained and rinsed
  • 1/2 small onion chopped
  • 2 limes juiced
  • 3 Tbsp olive oil
  • 2 tsp cumin
  • 1/2 tsp kosher salt
  • sprinkle smoked paprika


  1. Combine drained chickpeas and chopped onion in medium mixing bowl.

  2. In a separate small bowl, mix together lime juice, olive oil, cumin, salt, and smoked paprika.

  3. Combine dressing with chickpeas and onions. Top with some freshly cracked pepper and another sprinkle of smoked paprika, if desired.
