- 2 cans chickpeas drained and rinsed
- 1/2 small onion chopped
- 2 limes juiced
- 3 Tbsp olive oil
- 2 tsp cumin
- 1/2 tsp kosher salt
- sprinkle smoked paprika
- Combine drained chickpeas and chopped onion in medium mixing bowl.
- In a separate small bowl, mix together lime juice, olive oil, cumin, salt, and smoked paprika.
- Combine dressing with chickpeas and onions. Top with some freshly cracked pepper and another sprinkle of smoked paprika, if desired.
