An easy, quick pesto made with walnuts instead of pine nuts. Serve over pasta, zucchini noodles, or with bread.

- 2.5 cups basil lightly packed
- 1/4 cup walnuts toasted quickly in pan or toaster oven
- 1/4 tsp salt (or more to taste)
- 3 cloves garlic
- 1/2 cup Parmesan cheese
- 2 Tbsp butter
- 1/3 cup olive oil
Add basil, walnuts, salt, and garlic to food processor and blend
Add Parmesan and continue to blend
Add butter and olive oil, and blend until well combined
Initially I made this with 1/2 cup walnuts instead of 1/4 cup. It was a little too nutty. And when you're toasting the nuts, make sure not to burn them - it's easy to do!
